Crimson Bones is built from a blend of 18-24 month old barrel aged saisons referemented on second use Olallieberries and Cabernet Sauvignon pomace. This second refermentation on the fruit presents a subtle, more delicate profile that weaves together notes of dark cherry, black currant, and brambly berries with undertones of cedar, leather, and forest floor. Appears to be semi-opaque darker crimson with a white ring. Right away in the smell one gets the olallieberries, which are kind of like a hybrid of jammy blackberry and raspberry with a hint of plum, along with study oak, red wine, black cherry, and both kinds of currant. Taste is a punchier version of the nose, good sourness and acidity with some flowers and expressiveness added to the oak. Has hints of beet as it warms. Feel is medium bodied, with light funk, dark but clean oak, and building tartness through the sip. Good debut
