pretty special stuff here, a blend of three different vintages of their wild ale, where the yeast comes off a piece of alder wood, a really cool story and process, and we were all eager to open and share this one, a special bottle to say the least, a real unique expression of place, something we have been looking forward to! its strikingly well refined and delicate looking, bright yellow in the glass, crystal clear almost the whole way, with a fizzy airy white head and sparkling carbonation, this really pops, a stunner to look at. the nose is pretty sharp, sourer than anticipated, less funk more acid, lemon and woodiness to it, mature and complex no doubt, but unlike traditional gueuze from a fermentation standpoint, less musty and rustic, more vinous and vibrant, maybe cleaner, even though this is still wild, its tidy. raw wheat for sure, pils type crackery grain character too, but lighter than a lot of these, not starchy and full, but not thin or lacking in any way either. i get definite white wine in the taste, green grape and pear too, estery in a unique way, lightly spicy, dried flowers and herbs, verbena, elderflower, white pepper. its amazing how light it stays, lean in body, tart and fast finishing, subtle dried pineapple and mango nuance to this, but dry overall, very winey, even kind of tropical, definitely different, nicely aged with the wood profile on this, but also still somewhat green, in a good way. such a distinct ferment here, this really was a joy to drink, effervescent on the palate, warms up well, super wild and intriguing but also dialed in from a quality standpoint. downright impressive! fancy and regal.
