Wheels Up Saison is a polished honey shade of amber. The head is rocky, bone white, and lasting.
Sweetish aroma of honey takes the lead with gentle graininess and biscuit malts coming in to lend support. Honey and malt lead easily into notes of clove, pepper, and Belgian spiciness. All of this supporting what smells like ripe pear. The finish is a pleasing combination of earth and peppercorns.
This medium bodied saison starts of flinty in its dryness. That dryness accentuates this saison's flavors of clove, peppercorns, and up front malt graininess. Honeyish sweetness cuts the dryness and flavors of clove a bit. This is where Belgian funkiness comes in, giving my palate a smack in the gob with just the right level of assertiveness. All these flavors blend together well before leading into a finish of fresh cut grass and peppercorns.
I like this saison because it has a very assertive sort of character. Belgian spice dominates nicely with biscuit malts and honey giving good foundation. That malty sweet foundation cuts the spicy, clove flavors well enough to keep those flavors from becoming overpowering. This leaves me with a saison that is assertive, and quaffable all at once.
