This big, complex brew has spent the better part this past year slumbering in choice bourbon and rye barrels from our neighbors at the Colts Neck Stillhouse. To celebrate our first anniversary, we have carefully blended these mature ales back together along with a portion of fresh, rich imperial stout. The final product has layers of bold flavors alongside more nuanced notes. We get aromas and flavors of dark chocolate, candied dates, bourbon, vanilla, espresso, almond, and caramelized sugar.

Bottle to snifter. Waited a year on this one which is generally where i prefer my barrel aged stouts.
Look: jet black color. Thick look. Medium light brown head. Excellent retention.
aroma: Roasted malt, whiskey. Oak,
Taste: cocoa. Malt. whiskey. Oak. Raisin. Licoroce. Some oxidation.
Feel: mostly full body....90%. Pretty smooth. Carbonation is a bit weak, even for style.
A touch disappointed. Looks nice and tasty, but nothing special.

Pours pitch black, impervious to light. Ample mocha head. Aroma is mostly yeasty, with faint chocolate and bourbon. Taste - the yeast flavor throws me off, but under it I do get bittersweet chocolate, bourbon, and espresso. There is a dominating layer of tanginess that I can’t figure out, as there are no adjuncts. Medium bodied. Overall, a good try at a difficult beer; I really dislike yeast flavor, so this is not for me.
