Collaboration with Ghost Train Brewing Company
Back in October 2019 we hosted the rad dudes from Ghost Train to brew something truly unique.
Starting with a base heavy in triticale, rye and oats, we hopped generously with whole-leaf aged hops from each brewery and finished the brewday with fragrant Chamomile steeped into the wort. We then allowed the liquid to open-ferment in our coolship with our house mixed culture. After initial fermentation was complete, the beer was racked into ex-Chardonnay barrels for extended aging with additional wild cultures. After 10 months in barrels, the beer is ready to be shared!
The resulting beer showcases peach and apricot-like stone fruit notes on the nose, along with warming Chamomile. Medium acidity, refreshing dryness and effervescent carbonation throughout the palate.

Sweet, funky Brett and floral notes on the nose. Balanced funk & citrus with black pepper and stone fruit on the back end. Refreshing, clean; finishes mildly dry. A solid open-fermented farmhouse.
