Grafs can be 50/50 cider to beer, or more heavily favor one drink over the other. One consistent guideline seems to be that the cider and wort be fermented together, not blended after the fact. Ours is about 70/30 in favor of beer and we fermented it with a blend of our two house ale strains. We lightly hopped and dry hopped with Mosaic and HBC 472, which is an experimental hop with characteristics of oak, coconut, and vanilla cream.”
Dock Street & Ploughman’s Graf is made with a blend of apple varieties - Ben Wenk of Ploughman personally delivered Fuji, Gala, Cameo, Granny Smith, and Goldrush, all of which were used.

Notes: Brewed in collaboration with Ploughman's Cider.
Look: A slightly hazy deep golden body is capped by a short head of white.
Smell: Scented candle.
Taste: Apple, wood, flowers, tropical fruit, and golden cake. It's sweet but not too sweet, balanced by a moderate bitterness of around 15-20 IBUs that's enough to clean it up in the finish.
Feel: Medium bodied and gently crisp.
Overall: Quite interesting, and almost compellingly drinkable.
