Melons and Brettanomyces Bruxel
Volume II of The Finer Points of Bad Behavior series pairs Petit Gris and Canary melons from Seedling Farms in Michigan with a strain of Brettanomyces Bruxellensis known for its refined, ‘barnyard-y’ earthiness. Petit Gris melons are prized for their combination of delicate, perfume-like aromas with flavors of light brown sugar while Canary melons have a complex bouquet of pineapple, banana, and light musk. This beer is fermented to complete dryness which allows for the unique experience of deep melon flavors without any sugar. Enjoy now while the aromas and flavors of melon flesh, white flowers, pineapple, light brown sugar, banana, and overripe pear are predominant or allow to age and let the Brettanomyces accentuate the melon’s natural musk.
