Lychee Saison - Saison brewed with Brettanomyces Claussenii and Matured on Lychees - 5.6% ABV
The lychees were sourced from a tree in Dylan's Grandma's yard in Florida. When they were ripe she hand pick all of the ones she could reach and over nighted them to us. The next day we processed them and added them to a saison with brettanomyces claussenii and let it mature for several months before bottle conditioning. The result is a bright, tropical saison with aromatics of lychee, pineapple, mango, guava, and hay that jump out of the glass and a light dry finish that entices you to have another sip. We only packaged 168 500ml bottles total of this stunning beer (and there are only about 154 left after extensive...um...quality control...)
