Shiro Shezif is a collaboration saison with Aba Restaurant that was conditioned on freshly picked Shiro Plums. The plums were added with all of their ‘bloom’ still intact to allow whatever wild yeast and bacteria that were present on the skin of the plums to ferment the beer.

The result is a beautiful and delicate saison with notes of plum flesh, mango, white pepper, bales of hay, sultanas, and allspice. Bright, ever so slightly tart plum skin show up on the finish and leave you wanting another sip.

Only 180 bottles were produced.

Somewhat of a gusher upon opening - even chilled - just opened it over the sink and it was fine. The initial pours is a completely opaque, cloudy dark orange color. Thick pillowy white head forms on the beer before steadily dissipating leaving thin residual layer of foam on top of the beer.

The aroma has two aspects to it - first there is the sweet, fruity side, then underlying that is the spicy saison. The sweet side of things brings notes of sweet plums, light citrus, and mango. The underlying saison brings with it notes of spice, pepper, yeast notes, grains and hay, peppercorn, with a lingering light earthiness on the back end.

The taste follows the nose with notes of sweet plums, mango, some light lemon and orange citrus notes drifting into a spicy, earthy yeast character with notes of wheat, hay, grain, peppercorns, and a light dried earthy bitterness. There is just a hint of tart plum up front on the flavor profile, but its very subtle and doesn't linger. Abrupt finish doesn't leave much outside of a light earthy spiciness on the back end.

Feel is medium bodied, smooth, mild gentle carbonation. Semi-dry finish.

Overall this is a delicious beer - the shiro plums compliment the beer so well and provide this tantalizing tartness to it.
