The Finer Points of Bad Behavior is an ever evolving series of beers that pairs seasonal ingredients with unique strains of yeast specifically chosen to compliment, contrast, and elevate each other.
Volume VII revisits our original pairing of ripe peaches from Mick Klug Farms and a strain of Brettanomyces Bruxellensis known for its characteristics similar to white wine like Chenin Blanc and Pinot Gris. This time around we allowed for much longer contact time with the peaches and extended conditioning once bottles. This extended process time yields a beer that has more depth and complexity to its funkiness while remaining delicate and allows for a subtle, quenching acidity to emerge.

500 ml bottle into a tulip glass. Released 5/2021, had 9/7/21.
Pours a bright yellow, a little cloudy, with a one and a half inch foamy head and a good amount of foamy lacing. Active carbonation. Aromas of white wine, Brett, some peaches, light yeast, a little black pepper when warmed, a little bit of a spicy aroma. Also smells a little floral. Flavors of white wine, Brett, malt, peaches, a different kind of funky flavor at first, and spices, maybe? Tastes somewhat floral. Smooth, semi- dry, a good medium body, well carbonated.
Has a great aroma, and the Brett influence is noticeable. Pretty solid from top to bottom, well constructed. Worth a purchase.
