Finer Points of Bad Behavior Volume VII: Peaches and Brettanomyces Bruxellensis blended with Thai basil saison.
The Finer Points of Bad Behavior is an ever evolving series of beers that pairs seasonal ingredients with unique strains of yeast specifically chosen to compliment, contrast, and elevate each other.
Volume VII revisits our original pairing of ripe peaches from Mick Klug Farms and a strain of Brettanomyces Bruxellensis known for its characteristics similar to white wine like Chenin Blanc and Pinot Gris. This time around we allowed for much longer contact time with the peaches and extended conditioning once bottles. This extended process time yields a beer that has more depth and complexity to its funkiness while remaining delicate and allows for a subtle, quenching acidity to emerge.
Prior to packaging this portion of The Finer Points of Bad Behavior was blended with Stay, our Thai Basil collaboration with middlebrow to create a delicate riff on the classic peach/basil pairing.
Only 60 bottles made.
