A Kvass Inspired Rye Saison collaboration with our friends at Jeff & Judes.
'Window Fishing' is inspired by the Kvass tradition of making a fermented beverage out of day-old bread. We used 10 loaves of their beautiful marble rye to a mash reinforced with malted and caramel rye. The resulting beer is lovely liquid bread with notes of dates, figs, Dr. Pepper, fruit leather, and hints of caraway and cocoa with a dry and invitingly bitter finish.

After three months, I was good to my intent and finally bought the non-Brett rendition by mistake. (My review of the Brett rendition is one of my favorites of 3925 because, in it, I admit lots of reviewing is luck and serendipity ... the rest is work.)
As for this Window Fishing, I got lots of foam... I'm going to assume from some unusual yeast combo that resulted from the used bread in the Kvass practice. The foam settled quick and the saison proceeds to Smell likes lots of good saisons, subtle so the food can Smell, too. Tastes improve this balance because nothing tries to stand-out; finishes semi-dry. Saisons and food are like an orchestra and a chorus; they gotta play together. In my mouth, this is Feels fine. Cleanses the palate for another bite of pasta and marinara. Overall, I am a big Fan of Is/Was; this is my twelfth unique and since you can't keep up with my appetite... I'm going to revisit your non-Brett saisons.
Fellas .... Release this again latter in the year with a few tweaks to the Kvass practice. Thanks, much.

Pours a cloudy orange with off-white foam. Thin layer of head lingers. Has a traditional French saison yeast aroma combined with fruity and floral notes. Initial flavor is fruity and tart. Finishes dry. Body is light with moderate carbonation for a saison. Overall, an excellent representation of the style.
