The Finer Points of Bad Behavior is an ever evolving series of beers that pairs seasonal ingredients with unique strains of yeast specifically chosen to compliment, contrast, and elevate each other.
Volume VIII pairs Italian Plums from our friends at Mick Klug Farms in Michigan with a strain of Brettanomyces Bruxellensis known for its restrained funkiness and bright, wine-like aromatics. It pours a striking dark pink/light plum shade of violet. Its aroma showcases notes of jammy plum, sweet cherry, and just a wisp of funkiness. The flavor follows suit with notes of red berries, fruit snacks, prunes, and a dash of allspice before a lightly acidic and floral finish.

Got in a BIF from FBarber. 500 ml bottle into tulip glass, bottled in 02/2022. Pours slightly hazy ruby red/orange/amber color with a 1 finger fairly dense and fluffy head with good retention, that reduces to a thin cap that lingers. Nice spotty soapy lacing and a lot of streaming carbonation on the glass. Aromas and flavors of tart/tangy plum, fruit peel, lemon, lime, green apple, berries, white wine, hay, straw, floral, grass, leathery funk, cedar, peppercorn, wheat, cracker, and yeast earthiness. Light-medium herbal/woody bitterness, Brett spiciness, and light acidity/tang on the finish. High carbonation and light-medium body. Balanced grainy malt, sticky hop, and light-medium fruit tang/acids in the mouthfeel. Mild increasing warmth of 6.1%. Minimal puckering/astringent flavors. Amazing showcase of the Brett Brux. Very well developed funk and spice, with great balance of fruit presence. Little to no Lacto to be seen. Loved it.

Pours a hazy glowing auburn (almost similar to ruby red grapefruit juice, to a point) topped by a finger or so of dirty white foam. The nose comprises plum sauce, light brown sugar, graham cracker, and raspberry puree. The taste holds notes of Brett funk, light plum juice, apple cider vinegar, light cracker, and blueberry must. The body is a light-leaning medium, with a light-leaning moderate carbonation and a sticky, drying finish. Pretty solid stuff, makes me wanna seek out some Italian plums.
