Saison brewed with Purple Rice bottle conditioned with Brettanomyces
We got together with our friends at Funkytown Brewery and set out to make a perfect ‘food beer’, specifically one to pair with creole or cajun cuisine. So we built a base with pilsner malt, malted purple rice, and peachwood smoked barley then hopped it with Michigan-grown Cashmere hops. The resulting beer is crisp and structured with notes of white peaches, strawberry compote, rice-derived nuttiness, and wisps of fruity smoke.

Having enjoyed the non-Brett rendition next to a Funkytown copy, I sought that sensation again. For the Is/Was re-taste, I didn't recognize I was buying the Brett bottle. But my mistake all worked out because, here, Is/Was has modified their use of Brett from early on when they started this Brett/non-Brett routine for most batches.
It Is What It Was-Brett is a mouthful, literally; but more modest in mouthfeel. However it starts as a good Looker with a sustained foam, uncommon in my limited experience with Brett. Smells are a mild lemony funk and is pleasantly inviting. Tastes are balanced and complexed by all three brews smokiness... which seems to work more on the palate than the nose.
I drank half this magnum with a Southwest veggie burger lunch slathered with a moderate salsa. The balance will be along-side the Funkytown rendition tonight with also a moderately spiced dinner.
I agree with Emerge077, this is a successful collaboration from my 2nd and 3rd most favorite Chicago brewers.

Pale pastel canary gold, fluffy cap of foam rises above the rim and lasts a good while. Drippy arcs of lacing in the glass, lasting surface coverage.
Aroma is Brett forward, wet hay, brie rind, a touch of phenolic spice.
Lightly tart lemon, herbal hops, wisp of smoke, clove or baking spice, and a light strawberry note as advertised. Complex yet well balanced. Supple effervescent carb, smooth and easygoing, light acidity. Overall this was a successful collab, and i’ll look forward to more in the future.
