Spring Saison Brewed with Chamomile, Lavender, & Honey

Constructed to drink the thaw that spring brings it is built on a light and springy base of Sugar Creek Pilsner and Flaked Triticale and lightly hopped with floral Saphir hops. We added Guatemalan wildflower from our friends at Dark Matter during fermentation, to allow all of the sugar in the honey to ferment out while retaining the delicate, sweet aromatic from the honey.

After primary fermentation was completed we added a hot extracted tea made from chamomile and lavender along with our house blend of brettanomyces and it was allowed to ferment down to complete dryness. The resulting beer has a complex floral nose with notes of round chamomile, herbaceous lavender, allspice, wet straw, and wisps of pipe tobacco. The body is full and luscious for a bone dry beer and there is a suggestion of sweetness on the mid-palette from the honey before a satisfying, bitter-sweet finish.
