‘Farmhouse Ale’ brewed with Wapsie Valley Corn - Bottle Conditioned with Brettanomyces

Faux Cow is a collaboration with our friends at Seedz Brewery. It is an homage to our mutual favorite cream ale ‘Farmhouse Ale’ that’s only available in Wisconsin. We built a mash of pilsner malt from Sugar Creek and Wapsie Valley Corn, an heirloom corn native to Iowa that dates back to the 1850’s. We hopped it very lightly and fermented it hot with our house yeast. The resulting beer teems with notes of fresh sweet corn that are backed up with notes of light cucumber, lemon balm, marzipan, a crisp, clean body, and a finish that seems to pleasantly float away.

This version was bottle conditioned with our house blend of brettanomyces.

poured from a 500mL into stemmed glassware. pours a foggy golden orange with over three fingers of fluffy white foam head. aromas of leathery brett, citrus, lemon soap and floral hops. taste leans much heavier on the brett. finishes with a strong belgian yeast character. full mouthfeel. very fluffy and lively. this was quite good. heavy brett and belgian influence.
