Transparent yellow with thin head.

Lemony.

Lemon minus the pucker. Spicy? Peppery? Eh, yeah but not a selling point. I wouldn't turn down more, I very much like what it's got.

Thin and dry, dead on what I wanted.

a really delicate and pretty saison done with a special kind of blue wheat, which i believe is perennial. a cool way to introduce some terroir into a very drinkable beer. the fermentation profile on this is also awesome, my favorite expression of their house yeast in any beer so far, although i have only had a handful of their offerings. here its got some unique but not over the top esters of green pear, white grape, white peach, and fresh lemon. its not candy-like or bubblegum toned or anything, and its ever so slightly tart without being sour, clean but not boring, rustic without being bretty. the beer is pale yellow, less than clear but light and bright looking, average white head on it but nice lace as i work it down. smells a little tangy, with some fresh noble hop grassiness and a little bitterness too, also a lightly juicy note to the hops making this seem modern, and thats there in the taste too. i can appreciate this blue wheat as being something unique, i think it shines here despite this being so dry and objectively not malty in the traditional sense, its got a light spiciness to it that works with the hops, and it seems like a really cool ingredient for other brews too. overall i liked this a lot and was super impressed with fair isle in general, they are making some really clever and old worldy saison types in here, and should quickly rise to prominence with quality this high. this is probably the most mellow and approachable of all their beers i have tried.
