Saffron is a cocktail-inspired saison with bold notes of, you guessed it, saffron. Followed by oranges and an herbal bitterness, saffron is dry with delicate layers of fruit showcasing the herbs.
During the 2023 harvest, we received some beautiful fruit from old Syrah vines from the Yakima Valley. After crushing and destemming, we fermented the fruit on a mature oak aged saison from 2022 for several months then steeped with gentian root, burdock root, dandelion root, orange peels and if course, saffron.
We highly recommend Saffron as a great digestif!
