Would have rather bought one can instead of six. But I knew I hadn't tried Herbiery and the situation (heat) called for a summer wit.
I like the Herbiery's concept of brewing without using hops. That seems a bit radical; but it was the way brewing was five centuries or more ago. I can't be critical of a young micro's website, but it might be developed better... just to lay out the concept in more depth. It seems this micro is one man's vision for brewing and making it real make take lots more work, time and an active yeast. But, I give him some very good Overall Hugs.
As for Great Sage, it is tart for a wit. I'm going to assume the cause is the grapefruit peel. And because the peel steals the show, I don't get to taste the interplay of the sage and coriander... which are the herbs and, I presume, it should be their show.
A second can of Great Sage does not improve my rating. Lack of active yeast and swirling protein does not encourage foam or bubbles and makes for a flat beverage. But the lesson for next time, less peel... and perhaps not being so dogmatic on brewing with hops.
