Appearance: Poured with a thumb of head that never disappeared and laced like crazy. The body is a cloudy dirty blonde with amber notes and ample slow rising carbonation. Frankly the only thing stopping it from a perfect score is that upon close inspection , there is some incredibly smaller then sand in particulate.
Smell: Yep, that's hops alright, beautiful mildly floral, berry, citrus, pine and what you would expect from hops that carry the name Mosaic, so as advertised. Warming helps it's potency creep up and is needed.
Taste: Starts with simple barley malt that hands off to a rush of Mosaic Hops. That's it, there's nothing more to say here. It's done well, and is clearly as advertised but a complex world shaker, this is not. I can enjoy a simple beer, but this offering takes it to the extreme.
Mouthfeel: You do start to get a clinging hard water mineral note over time that does detract from things. The transitioning is great, but it's not exactly travelling a long distance and the carbonation is perfect at accentuating the entire beer. That said, hard water is something the style is traditionally known for, so I'll give it a bit of a pass.
Drinkability: Maybe only slightly lighter then medium bodied, and settles down well and has that pale ale crispness making it refreshing. Really if not for that mineral note in the mouth, this would be stellar. I could really go for one of the spring I think.
Final Thoughts: This beer was brewed for the beer bar, also named Mosaic in Hamilton, and it's label I believe tells the story of a stolen patio heater the bar bought to try to extend their outside hours during Covid. Thus this purchase was an easy one for me. The beer itself is a simple almost to a fault, pale ale using Mosaic hops. There's not much more to be said, as this one is an ideal measuring stick for a good pale ale without any bells or whistles.
