Assiduous is the family name for our barrel aged brett saison projects. This beer is a perfect canvas for all sorts of tasty additions. In our first release of Assiduous we aged it in red wine barrels, made it sour and added 300g/L of apricots. That means each bottle is 30% fruit (1/4 lbs of fruit in every serving). Assiduous pours a hazy bright orange. Aromas include ripe peaches, apricots, green apple and toasty oak.
Vibrant stone fruit notes dominate the palate with peach and apricot up front. Undertones of mango, pineapple, toasty oak and white peppercorn on the tail end.
Assiduous: Apricot has a medium-light body and is dry with a moderately clean acidity. Expect tiny tingly bubbles on the tongue. Like all of our mixed ferments it is bottle conditioned and best stored upright in a fridge 24 hours prior to enjoyment. We recommend serving at 7-10°C.
Fruited beers are typically best enjoyed within a year.
