Spontaneous Ale with New Jersey strawberries, aged in a Cognac cask.
Our base spontaneous featuring all-New Jersey pilsner and wheat malts from our friends at Rabbit Hill Farms fermented for a year in French Oak before a very short refermentation last year with big, beautiful crimson strawberries grown by the great folks at Alstede Farms in Chester.
After the refermentation, we sent the beer to a first-use French Oak barrel that originally held Ferrand Cognac, and was last used to finish 6-year-old George Dickel Tennessee whisky.
