a rather unique belgian wit type, a little conservative on the yeast compared to most of these, either done cooler, with a blend of strains, or constrained in some other way, its not all esters and spice notes from the ferment, and i taste quite a bit more wheat in this than i often do in the style, id say it drinks like a hybrid between a witbier and a more conventional american wheat type. its blonde and sunny in the glass, more yellow than pale, and without much haziness. the head is short and fading, white, but it doesnt look lively enough for a belgian style to me. the aroma is solid, fresh lemon, earthy malted wheat, a little light honey sweetness, cut flowers, green grapes, and just a little white pepper and anise seed nuance from the yeast, but this stops well short of the bubblegum and banana and clove range. the flavor is simple too, some nuttiness to the grain, a little sweetness there too, saltwater taffy, pancake batter, and a lot less from the yeast again than most of these have, but subtle cracker pepper, lemongrass, white wine, and pineapple candy. i like my wit types fluffier feeling, this has the body without the lightness, and its not as effervescent as the best ones are. that said, its quite different in terms of proportions and stands as a rather unique and approachable brew. refreshing after a long work day, but doesnt quite check all the style boxes for me, despite being pretty well made...
