Notes via stream of consciousness: This is a Belgian-style witbier done with fresh ginger and peaches. It looks like a witbier with hazy golden body that's capped by a short head of creamy bright white foam. The aroma smells woody, which I'm guessing is coriander seed. I may or may not be getting some ginger but it's certainly not clear, and there's just a touch of peach and you have to search for that. I'm cool with that though, no one said you'd need to have those in the aroma. Let's see if you find them in the flavor... well there's some. I mainly get the wheaty malt and woodiness of the coriander, but then some peach backs that up. I'm thinking there's the usual orange peel in play as well. The ginger is there, but again, it's light. That may or may not be a good thing based on your personal tastes. I love ginger so I could do with more but I can understand why they've kept it restrained. It does leave a zesty spiciness on the tongue though. Overall I find it quite balanced. Thinking about it though, with peaches mentioned in the name maybe it should be more peachy... ? I don't know. It's pretty good as it is and I want to judge it without bias so forget about the whole peaches in the name thing, just remember that it's definitely not a peach bomb. In the mouth it's medium bodied and a little fuller than I usually think of a witbier, but it's not nearly as full as Blue Moon which is over the top in my opinion - this works. It's crisp across the palate which helps to bring out that testiness from the ginger, and it finishes dry and softly spicy. Looking back, the head held up fairly well initially before dropping to a standard collar, and it left some beautiful lacing all about the glass. So to sum up, while it could be 'more', sometimes more is less. I'm not sure on this one because this is the only batch I've tried, but I'll keep checking back to see if they amp it up a bit in the future. And on that note I will say that I think this could be a year-round offering, or at least from spring through fall. It's the first week of February right now and it's freezing out but I'm still really enjoying this. Worth trying!
