We Are Not The Counter Culture is a 6.2% ABV mixed fermentation saison brun lagered for 8 weeks and conditioned with wildflower honey. This beer does not fit neatly inside a stylistic box—it presents with the expressive yeast character of a saison, and the toasty malt complexity of a brown ale. Notes of brown sugar and multigrain toast with strawberry jam appear prominently in the nose, followed by softer aromas of leather, baking spices, and caramel apple. The palate features flavors of cola and cream soda, with a bit of hazelnut and a soft breadiness. The yeast provides complementary notes of orange blossom, Anjou pear, and just a hint of peppercorn. Overall, the beer is medium-light in body, and presents with a silky texture and a creamy carbonation. With a dry finish and a whisper of acidity, this beer is balanced and drinkable while still offering a complex flavor experience. We Are Not The Counter Culture is a beer made for food—it is incredibly versatile and the opportunities for creating interesting pairings are basically endless. This beer belongs on the dinner table.

750 ml bottle into a tulip glass. Had 6/2/23.
Pours a ruddy brown, cloudy, with a huge spongy foam head that lasted for minutes, lots of creamy foam lacing. Aromas of cola, a light funk, light cherry and apple, spices, some peppercorn, light caramel and yeast. Smells herbal and somewhat floral. Flavors of some caramel and apple, some cola, malt, spices, light yeast. Tastes funky and herbal. Smooth, a very good lighter medium body, well carbonated on the high side.
Another lame attempt to describe a complex and layered KT beer. Yeasty, herbal, fruity, spicy and delicious. Aromas and flavors are soft and nuanced, not loud. Will likely be my last KT beer, wish I had more than the five I did.

Cellared a year. Reddish brown body, tan very full head, spotted lacing. This beer does well to play with the yeast, flowers, mild honey, earth, and wild nature of the mixed culture saison while bringing in the bruin flavors of leather, dark bread, slight cola, dark fruit, a touch of vinegar, and black pepper. The nose is more in the sweeter sense, where the taste enhances the more savory tones. The taste comes across a little odder because of this, as the phenols and earthy tones cut into the nuanced wild ones that the nose loves so. Feel is lightly sour but very rustic and wild, lighter bodied. Overall very complex, but a little caught between styles

Aroma is musty and bacterial, mild funk, some maltiness behind that.
Taste is tart and mildly malty, super effervescent which sort of scrubs the flavors away, but also keeps you drinking more. A bit of spice and toast lingering in the background. Something vaguely fruity, mild phenolic pepper spice. Effervescent with slightly too much carb, but nothing that can't be swirled away. A dark saison, one style you don't see often these days. Reminds me of JP beers a decade ago, pushing the boundaries once upon a time.

750 mL bottle. Clear amber. Smells of honey, florals, light caramel. Tastes a little tart with earthy notes, sweet honey and florals. Well carbonated. Kinda sweet instead of bready, which is kinda what I expected. Neither here nor there. Good, but not my favorite.
