Preoccupied with Memory and Expectation is a 6.4% ABV mixed culture saison made with Japanese red shiso leaf, burnt honey, and dry hopped with Sabro hops. This beer presents with notes of wild strawberry, passionfruit, satsuma orange, and honeyed toast beneath a lily-floral perfume. Flavors of white peppercorn, gooseberry, and coconut are carried over the palate and complemented by a creamy, blooming, ocean-spray carbonation. Medium body and silky in texture. Preoccupied with Memory and Expectation is one of the more tart beers in the KT line-up thus far and offers a zippy lemony acidity overlaying a soft, earthy, tea-like bitterness. There is a lot to unpack in this weird beer if you are interested, but it is simultaneously about as easy to sip as an Arnold Palmer.

It suited itself to being highly referential, with a deep nod to pop art in Warhol’s flower prints, punctuated by delicate gold Kintsugi-esque line work. This one pours a burnt orange amber sort of color, with a small head, and lots of lacing.
This smells sweet dried berry, floral funk, breadiness, honey, and tea.
This is a really unique and interesting beer for sure. There’s a wonderful tea-like and floral funk to it, with a sweet citrusy and berry thing, and a light bitterness and light bready sweetness.
This is light bodied, clean, with not much acidity to it. It’s nicely drinkable.
This was definitely a nice introduction to this brewery that was previously completely off my radar.

This is light bodied, clean, with not much acidity to it. It’s nicely drinkable.
This was definitely a nice introduction to this brewery that was previously completely off my radar.

Orange-amber tone, ample foam that rises up to the rim of the glass. Flecks of spotty lacing. Lasting surface coverage on the second pour. Chilled bottle gushed so have a glass ready.
Complex aroma of savory herbal notes, grapefruit, eucalyptus, earthy wild yeast. Very interesting, has the signature dry-hopped wild ale character but more depth from the shiso leaf i’m guessing.
Tart lemon and grapefruit backed by savory herbs, hint of phenols, drying finish. Uniquely savory, tart, and quenching all at the same time. Traces of tropical fruit, sweet tarts, tea leaves. Low level bitterness in the aftertaste.
Medium bodied with ample effervescent carbonation. Moderately acidic though balanced with a mild sweetness and herbal savoriness. Overall it’s a very unique and enjoyable beer. Always look forward to new KT releases, and this one is no exception.
