This Citrus DIPA is a sacrifice to the ghosts that haunt our staircase. Duh.

For 36 Stairs to Rankin, we took a hefty dose of Wheat and Oats, added Flaked Wheat and Oats, and then added even more Wheat. It made for one hell of a thick base, which we loaded up with a truly stupid amount of fresh, hand-processed Orange Peels and a blend of sea salts. We slipped a bunch of fresh-squeezed Orange Juice into the Whirlpool, fermented it with our fruity IPA yeast, and just straight beat it mercilessly with Segal Ranch High Oil Cascade, Mandarina Bavaria, Citra, and Enigma.

It’s reminiscent of Floridian citrus groves, “um…no”-sized resin dabs, spoonfuls of overripe passionfruit, and brunch-time fruit salad with just a hint of salinity on the back.

A: Pours a very hazy to murky medium golden apricot in color with moderate amounts of fine active visible carbonation rising along the edges of the glass and moderate peach + medium golden yellow + bright yellow + pale orange colored highlights. The beer has a three finger tall dense sudsy foamy bright white head that slowly reduces to a large patch of very slightly mottled thin film covering the entire surface of the beer and a medium thick ring at the edges of the glass. Moderate to significant amounts of lacing are observed.

S: Moderate to strong aromas of juicy citrus/orange + citrus/tangerine + tropical/passionfruit + floral hops as well as moderate aromas of citrus/orange zest + citrus/orange peel with a hint of saltiness. Just shy of moderate aromas of biscuit + honey + wheat + oat malts with a moderate amount of honey-like sweetness.

T: Upfront there are just shy of moderate flavors of biscuit + honey + wheat + oat malts with a moderate amount of honey-like sweetness. That is followed by slightly stronger than moderate flavors of citrus/orange zest + citrus/orange peel with a hint of saltiness. Finally there is a moderate to strong flavor of juicy citrus/orange + citrus/tangerine + tropical/passionfruit + floral hop which impart a hint of bitterness which fades away quickly leaving slightly stronger than moderate flavors of orange citrus lingering.

M: Just shy of medium bodied with moderate amounts of carbonation. Slightly crisp upfront with a light to moderate amount of soft/fluffiness mid-body and a light amount of dryness in the finish.

O: Easy to drink with well hidden alcohol and a pleasantly soft/fluffy mouthfeel. Enjoyable with lots of orange citrus presence and just a hint of saltiness. I could easily have another of these.
