“Devilish and Fancy” is a gose with sea salt, coriander, guava, feijoa, raspberry, and mango. And it is a tasty little demon.
We changed up the situation from our last gose, tweaked some things on the brewhouse side of things, and said bye-bye to the Lactose. We couldn’t be happier with the end result, as we feel that we achieved even more body and fruit character than last time!
Pretty much a Capri-Sun that someone melted a box of fruit-roll-ups into. Massive pineapple and strawberry character up front, followed by a tidal wave of guava candies, a spritzing of tart raspberry, and a really cool salty-citrus balance at the end from heavier doses of sea salt and coriander. So good, it’ll make you wanna summon your inner party-demon. But, like, the fun one.
ABSOLUTELY NO LACTOSE IN THIS BEAST!

Poured from a can (no date I could find) into a pint glass
L: totally opaque pink/red grapefruit and orange juice color, slightly milky, moderate off white head that faded after a couple minutes
S: rich, full tropical fruit nose with a tart salty aroma quickly following and a sort of refreshing herbal note as well. Guava shines, salt and coriander adds some complexity to the fruit-driven aroma. Get lots of guava, some strawberry, pineapple, general nice tropical
T: follows the nose well, again lots of guava but salt comes through nicely and the coriander adds this herbal complexity that makes me think of rosemary? Tart character builds toward the medium/long finish, but would say it’s more a counter to the fruit-forward flavor than a dominant aspect. Guava, raspberry, strawberry, pineapple all present. Get some more malty/bready flavor as it warms, but in the background
F: medium body, medium carbonation, moderately drying, fairly smooth but not creamy or rich which I would have dinged it for
O: a really delicious tropical fruit-forward gose. May have liked more salt, but overall great (if you’re prepared for a lot of fruit!)

A: Pours a murky milky pale to medium golden pinkish orange in color with moderate amounts of fine active visible carbonation rising along the edges of the glass and moderate pink + pale orange + apricot + peach + pale golden yellow + bright yellow colored highlights. The beer has a three finger tall dense fizzy sudsy foamy white head that slowly reduces to a large patch of thin film covering the entire surface of the beer with a thin ring at the edges of the glass. Light amounts of lacing are observed.
S: Moderate to strong aromas of juicy tropical/pineapple + tropical/mango + tropical/guava + strawberry + raspberry fruit over the top of light to moderate aromas of slightly sour wheat malts with a minimal amount of sweetness and a light amount of lacto lemon citrus. Light hints of brininess and a hint of coriander spice.
T: Upfront there are light to moderate flavors of slightly sour wheat malts with a minimal amount of sweetness and a light amount of lacto lemon citrus. That is followed by moderate to strong flavors of juicy tropical/pineapple + tropical/mango + tropical/guava + strawberry + raspberry fruit. Finally there is a light amount of brininess and a hint of coriander spice. Light amounts of lingering tartness.
M: Slightly heavier than light bodied with moderate amounts of carbonation. Slightly soft, slightly creamy with a light amount of acidic prickliness.
O: Easy to drink with well hidden alcohol and a very pleasantly refreshing mouthfeel. Enjoyable with tons of fruitiness and without the lactose sweetness. Nice presence of slight acidity and brininess. Perfect after a long day of running and chasing the kids on their bikes in the hot summer sun + humidity - I could easily have a couple of these tonight.
