Collaboration with Two Tides Brewing Co.
Half of our dual-release Two Tides Collab mix-pack bonanza is “Zillions of Knives”, a Singapore Sling Tiki-inspired Sour Ale. Starting off with a base of @Riverbend 2-Row, and a heavy dose of Spelt, Oats, and Wheat, with just a touch of Honey malt and Lactose to balance things out. Soured overnight in our Kettle, fermented with our House IPA yeast, and then refermented on a dump truck’s worth of Pineapple, Cherry, Clementine, and Lime.
Fruit punch AF with Cherry and Pineapple battling to be first on the bill, then mellowing into a bit of herbal spice from the Dark Cherry, and finishing up with a nice, tart kick of Clementine wedges and Lime peel. We absolutely hit the well-known Singapore Sling head-on and we’re so stoked on it.

A: Pours a relatively clear medium reddish orange in color with moderate amounts of fine active visible carbonation rising along the edges of the glass and moderate ruby red + burnt orange + bright orange + pale purple colored highlights. The beer has a three finger tall dense fizzy foamy light pink head that reduces to a handful of small patches of very thin film and a very thin ring at the edges of the glass. Light amounts of lacing are observed.
S: Moderate to strong aromas of tart fruit punch (cherry, pineapple, lime, and tangerine) over light to moderate aromas of slightly sour wheat malts with a light amount of fruit sweetness and a moderate amount of lacto tart lemon citrus.
T: Upfront there are light to moderate flavors of slightly sour wheat malts with a light amount of fruit sweetness and a moderate amount of lacto tart lemon citrus. That is followed by moderate to strong flavors of tart fruit punch (cherry, pineapple, lime, and tangerine). There are moderate amounts of lingering slightly sour fruit punch flavors.
M: Light to medium bodied with moderate amounts of carbonation. Light amounts of acidic prickliness.
O: Easy to drink with well hidden alcohol and enough acidity to be refreshing. Enjoyable and while I have never had a Singapore Sling, I can see the appeal and might have to try one the next time I’m out at a Tiki bar.
