Collaboration with 12 Bones Brewing
We’ve known Brandon from 12Bones Brewing for years now, and we tend to geek out on weird beer whenever we get together. Naturally, “Biscotti from Above 2020” is a Biscotti-inspired Pub Ale, and our collab to help celebrate the 15th Anniversary of 12 Bones BBQ.
Mashed with a base of Riverbend Malt Southern Select and Munich with just a touch of Pale Chocolate, hopped with Fuggles and East Kent Goldings, hit aggressively with fresh-roasted Almonds and Vanilla in the Whirlpool, and then fermented with our House English Ale yeast. We gave it a subtle kiss of Cinnamon in the Brite tank for that baked cookie effect, and wow...this tastes like fresh Biscotti with a light chocolate drizzle!
Notes of fresh-baked Almond Biscotti drizzled lightly in chocolate, that smell of a bakery/cafe first thing in the morning, vanilla sugar cookies, fresh-baked multi-grain bread, and just a touch of that classic English noble-hop tea-like character on the finish. HELL YEAH.

A: Pours a clear but opaque very dark mahogany approaching black in color with moderate amounts of fine active visible carbonation rising along the edges of the glass and moderate dark cola brown + garnet red + dark chestnut brown colored highlights. The beer has a two finger tall dense sudsy foamy dark beige head that slowly reduces to a handful of medium sized patches of medium thick film surrounded by a large patch of slightly mottled very thin film covering the remainder of the surface of the beer and a thick ring at the edges of the glass. Moderate to significant amounts of lacing are observed.
S: Slightly stronger than moderate aromas of toasted + dark + caramel + chocolate malts with a light amount of caramel sweetness. Just shy of moderate aromas of vanilla + almond along with light aromas of tobacco + light fruit yeast. Finally there is a light presence of tea + honey + earthy hops.
T: Upfront there are slightly stronger than moderate flavors of toasted + dark + caramel + chocolate malts with a light amount of caramel sweetness. That is followed by moderate flavors of vanilla + almond along with light flavors of tobacco + light fruit yeast. Finally there are light flavors of tea + honey + earthy hops which impart a light amount of bitterness which fades away leaving lingering honey + almond + malty flavors.
M: Just shy of medium bodied with moderate amounts of carbonation. Smooth.
O: Very enjoyable and easy to drink with well hidden albeit low ABV alcohol. Nice complexity to the aromas + flavors of the malts and it definitely delivers as described making me think of biscotti. Hope they do another take on something like this again in the future.
