Appearance: Bright gold with slight haze. Develops a fluffy white head with stacks of tiny bubbles. Good head retention. Fast Carbonation.
Aroma: Floral, earthy, grassy. Hints of fruity esters
Flavor & Aftertaste: Definite light oak flavor start to finish. Mild citrus and grassy flavors. Not off-putting at all. Restrained bitterness. Dry.
Palate: Medium bodied. Highly carbonated. Moderate length dry finish with no bitterness and oak extending into it.
Overall: 500ml bottle - For their first stab at an barrel fermented beer, NoFo Brew Co. hits a home run with this one. It's quite different, obviously, from the bourbon barrel aged beers that are very popular. This one was aged in American White Oak, which perfectly blends with the fruity, estery characteristics of the Saison. Head retention was good. It's highly carbonated and still has a nice mouth-feel to it. The alcohol is present; but not overbearing at all. Well done.
