Brewed with a blend of floor malted barley and spelt malts and 100% Spalt hops. Light and zippy with moderate bitterness and a dry, refreshing malt character. Notes of Heu (hay), light citrus and carbonic bite. Packaged with krausen in green long neck bottles.

my first beer from these guys, huge thanks to my brother for hooking me up with a mixed four pack of pint cans, looks like a lot of thoughtful and high quality old world styles here, and i was pumped on all four of the beers, this one especially, a real rustic unfiltered lager done with spelt and noble hops, delicious, drinkable, authentic, while also being unique, definitely a standout in the american made lager game as far as i am concerned, and i hope to get more of this in my belly again soon, probably my favorite of the four. this is gorgeous, super pale and bright yellow, near clear but just ever so slightly less than that, huge rising pure white peaky head and a ton of bubbles, looks almost saison-esque to me, love the thickness of this foam. the nose is earthy, pils malt crackery character, and obviously german at its core, but the spelt has some heft to it, an organic cereal thing, and minerals, even terroir, still light overall but a lot more nuanced than most, brilliant water chemistry and pretty heavy handed hopping evident as well, this is probably decocted. the flavor is great, very fresh, and the lager yeast is distinct too, bready and doughy at the same time, done nice and cold and long it seems, this is crisp and crackling dry, but the fast finish does not come at the expense of grain character, i am amazed by the layers this presents with, lightly spicy on the grain side too almost a rye note, some protein, husky and hully in a good way, really dig it. the hops start pretty early too, grassy up front with some pleasant finishing bitterness, an organic and almost healthful vibe to this overall, extemely excited carbonation makes it real refreshing along with the low abv, and this is a beer i wish i had an entire fridge full of, subtly nerdy german lager with careful attention paid to everything from water to ingredients to recipe and refinement, really special lager, bravo! hell of a first impression of human robot for me!

Clear pale straw with decent effervescence and three fingers of dense, near-white foam head. Good retention and lacing.

Similar elements show up front in the taste, coupled with a definite metallic bite, and in my opinion, stepped on by an overly bitter, strongly pill-like finish. I avoided pouring the krausen, too.
More body than expected in the feel. Some soft zip to the carbonation.
Love the green bottles, but the aftertaste comes on too strong for me in what is otherwise an exceptional beer. I want to taste that light-struck skunkiness over the tea-leaves and aspirin backend to this.
