SEETH - 13.5% - Stout aged in bourbon and rum barrels. This stout is inspired by the 'Vinos olvidados' (forgotten wines-some of which are aged 84 years before bottling) of Spain. High residual sweetness (17% sugar) and acidity, with just enough carbonation to protect against oxidation. Molasses and dark chocolate dominate, with vanilla, allspice and tobacco lingering in the background. This bottle is meant to be shared, served around 50f, and can be corked and stored for a few days after opening without losing its charm.

500 ml bottle

Pours inky black, with a slow rising head of tan bubbles. Once the head forms then it fades to a ring around the glass. As it warms, big boozy aroma - I do get the blend of rum and bourbon. Similar taste, the barrel flavors are bold but there is a solid dark chocolate base. But not too sweet. Full bodied, slick mouthfeel

Plum black with some soupy, bubbly wisps of dark khaki head. The beer is thick enough that parts of the head dissipate before bubbles beneath rise for more head to form to create a lasting crown that leaves some light, spotty lacing.

Dessert wine, rotten fruit, chocolate and umami show in the nose when cold.

Similar characteristics carry over to the taste: chocolate brownie, umami, dark fruit, grape jam and vanilla. Strong sweetness is somewhat cut by the darker elements and some moderate earthy bitterness.

Thick, viscous feel with just a smidge of carbonation coming through.

Is this Human Robot’s first barrel aged beer? If so, it’s an excellent start. Volume 1.
