VECCHIO NUOVO - 4.8% - Italian Pils with our buds at Everywhere Beer (Orange, CA). We brewed this with a simple single decoction mash and hopped through the boil with Hallertau Mittlefru, then hopped the whirlpool and dry hopped with Saphir. The combination of a traditional variety (hallertau mittlefru) with a newer developed hop (saphir) speaks to the philosophy of both of our breweries: places where old methods are practiced alongside modern, science and tradition holding equal weight. Fresh, green stems and a mild citrus with an herbal character cutting right through. Saphire jumps off the foam while mittelfru provides gentle bitterness and mild lemon peel.

Hazy dark yellow with a thick, dense, uneven off-white head. Good retention and lacing.
Lemon, distant lime, pollen and dry biscuit in the nose.
Lightly sweet up front in the taste. Lemon and biscuit, mostly. A hint of buttery marmalade behind. Not particularly bitter. Lingering floral citrus Bergamot tea and herbs.
Soft, full feel with light, tight zippy carbonation.
Lots of great depth in the hop profile, over a relatively clean, biscuity base. Kicking myself for not trying this as fresh as possible as it’s super interesting as is. Very enjoyable.
