Scottish Ale. The base malt is one of the quintessential malts to come out of Scotland: Simpsons Golden Promise. It is
the base for so many Scottish and British beers, and it's also what they use at the Macallan Distillery. Balanced, it makes exceptional beers. Bready. Malty.We also used a special type of malted oats to give the finished beer smoothness, and it was fermented with a yeast from Edinburgh.
