ive liked a lot of their canned saison or farmhouse types, but this one is on its own level, the can conditioning is incredible, there is light funk to this to support a more familiar clean saison yeast profile, its nicely hopped, super refined, and presents as quite modern overall, despite its obvious roots in the old world. i usually lament this type of thing from american breweries, they always seem to use the same yeasts, and the beers end up being more belgian golden than saison most of the time, so this was a welcome change of pace, really quite complex, although not at the expense of drinkability, which rules. golden brew with a high white almost hard to control head, tons of bubbles and effervescence, i love the look of this and it carries over to the texture. aroma of lightly fruity yeast, banana and green pear but not big esters, green grapes, key limes, white pepper, clover flowers, and honeysuckle. its bright but also funky without any tang, some hay and clean lemon in the mix as well, and it doesnt change much as it warms. the hops are there too in both aroma and flavor, i get quite a bit of fruitiness, less noble spiciness, but im not sure what they use, a little more modern there. the ferment is amazing, not quite a mixed profile, but i do think i pick up some newer brett character, intentional or not, and its neat with the minerals, the clean wheat and pils type grain base, and the overall dryness, so it stands out a lot on the finish. still behind the pitched yeast culture, but they go well together, and its just nuanced enough to be curious and almost addicting. i bought a single but i should have grabbed a couple four packs. this is like permanent fridge beer for me, drinkable as they come but with enough going on to hold my attention, awesome mouthfeel too. this is technical precision in the style. lovely!
