The latest addition to our non-fruited Sour IPA series. Brewed with milk sugar, raw wheat, and fluffy malted oats. Inoculated with our house lactobacillus culture and hopped heavily this time with Azacca, Wakatu, and Mosaic. ⁠ ⁠ We took the pH on this one down a little further and the resulting beer is beautifully tart and refreshing. ⁠ ⁠ Reminds us of strawberry jam-slathered biscuits, a lime wedge perched on a sugar-rimmed margarita glass, and satisfying gulps of pink lemonade drink mix.⁠

A: The beer is hazy and a little pale yellow in color. It poured with a short white head that quickly faded away, leaving only a minuscule collar around the edge of the glass.
S: Light aromas of sourness are present in the nose along with notes of lime and tangerine.
T: Like the smell, the taste is a somewhat sour and has underlying notes of lime, stone fruit, and tangerine.
M: It feels light- to medium-bodied on the palate and has a moderate amount of carbonation.
O: This IPA isn't overly sour and has a nice amount of citrusy and tropical fruit aromas and flavors from the hops.

Reviewed one day after can release. Poured into a Spiegelau IPA glass. It pours a cloudy, golden lemon color with a frothy, bright white cap and soapy lacing. On the nose there is wild yeast and lemon peel. But there's also a rustic, earthy, spicy element that's pleasing but hard to describe. As expected, the taste opens sour but the sourness is quickly balanced by the milk sugar and malted oats that deliver a honey-like sweetness. There is a noticeable biscuit/cracker taste in the background and an earthy, white wine presence that I attribute to the Wakatu hops. The Azacca hops contribute tangy citrus and stone fruit notes. Flavor-wise there's a lot going on - but it works! This ale is lite and crisp with lively carbonation and the 6.8% ABV gives it good substance without distracting. Overall, Valley Kill is a bit unusual but highly satisfying. It's a great warm weather beer that bridges the gap between American IPA, American Wild Ale, and Berliner Weiss. I would definitely drink it again.
