Dry-Hopped Brett Pale Ale brewed with Premium German Pilsner malt, malted Spelt, and Raw Wheat, hopped in the kettle with Motueka and Mosaic, then dry hopped with Wakatu. We fermented this beer in one of our American Oak Foeders using an extremely unique and expressive strain of Brettanomyces. The fermentation was long and slow, and the beer it created is tart, complex, and extremely nuanced. We then transferred the beer into stainless and dry hopped it lovingly to pull out/enhance more of the crazy interesting Brett characteristics. We're tasting kefir lime, bright, overripe strawberry, tart blueberry pie filling, from-concentrate limeade, and a plate full of lemon-zested sugar cookies.
