Beginning with Volume 1, we mashed in a thick imperial stout, based on our favorite blend of dark malts. After a long boil and vigorous fermentation, we racked this decadent stout into freshly dumped bourbon barrels from our friends at Black Dirt Distillery. One of the many joys of brewing in the Warwick Valley is having a quality local distillery that is just a few minutes down the road. We believe that using the freshest barrels, still dripping wet with bourbon and distilled with Warwick grown grain, is immensely important in producing the highest quality BA stouts while also imparting a bit of that Dirt Rich Terroir that makes our beer special.

After an 18-month initial soak in the bourbon cask, Volume 1 was racked to a Cherry Brandy barrel for a second aging period of 6-months. When first tasting the finished beer, we were both surprised, and immensely impressed, by how much flavor was imparted by both spirits. Even more pleasing is how these flavors worked in harmony with the rich base stout. Like the best chocolate cherry cordial you've had, it's reminiscent of biting into a juicy brandy soaked cherry, richly coated with premium milk chocolate, filled with decadent ganache, and encompassed in spicy bourbon notes. Best at 55 degrees, and shared with good company.

750ml waxed and capped bottle into a Founders snifter.

Pours a dense pitch black. No head, no lace. Thick, oily legs. Nose is fudge, booze molasses, and cherry syrup. Pretty muted. Beer opens fudge, chocolate, and booze. Hints of iodine, cherry syrup, and dark dried fruit. More fudge, cocoa powder, and oak at the finish. Syrup and cocoa in the aftertaste. Body is full with low carbonation. Slick and chewy on the palate and goes down warm and boozy with a lingering aftertaste. A touch coarse.

Solid but there's something missing here. The brandy comes across as a bit harsh and integrated with the rest of the flavors.
