We are happy to release Volume 2 of our Double Barrel Series and once again mashed in a thick imperial stout, based on our favorite blend of dark malts. After a long boil and vigorous fermentation, we racked this decadent stout into freshly dumped bourbon barrels from our friends @BlackDirtDistillery. One of the many joys of brewing in the Warwick Valley is having a quality local distillery that is just a few minutes down the road. We believe that using the freshest barrels, still dripping wet with bourbon and distilled with Warwick grown grain, is immensely important in producing the highest quality BA stouts while also imparting a bit of that Dirt Rich Terroir that makes our beer special.
After an 18-month initial soak in the bourbon cask, Volume 2 was racked to a Raspberry Brandy barrel for a second aging period of 6-months. When first tasting the finished beer, we were both surprised, and immensely impressed, by how much flavor was imparted by both spirits. Even more pleasing is how these flavors worked in harmony with the rich base stout. Like a deeply rich and decadent slice of dark chocolate raspberry cake, with perfectly ripe raspberries on top and chocolate mousse between each fudgey layer. Best at 55 degrees, and shared with good company.

750ml waxed and capped bottle into a Side Project snifter.
Pours dense and thick. Pitch black. No head, no lace, big, brown legs. Raspberry flavored chocolate is pungent and accompanied by copious amounts of booze and molasses. Flavor is just as the nose predicts. Chocolate covered raspberries. Seedy, fudgey, and sweet. Molasses and more raspberry syrup at the end. Boozy finish with a raspberry gummy and milk chocolate aftertaste. Body is full with moderate carbonation. Lightly prickly on the palate and goes down hot. Sticky, lingering aftertaste.
This one's decent but a touch sweet. The body needs some smoothing out as well.
