Sichel is a rustic rye lager. Built on a robust base of 55% rye, its malt profile is deepened with toasty Vienna Malt, the subtle sweetness of crystal rye, and the roasted nuance of chocolate malt. A single decoction mash coaxes out more cereal grain character. Fermented with our house lager yeast and extended lagering in toasted French oak adds layers of depth.
Pouring rich amber with an off-white head, Sichel offers an inviting aroma of toasted bread, cocoa husk, and gentle rye spice. On the palate, it strikes a balance between caramelized grain, earthy spice, and a whisper of dark chocolate bitterness. Softly hopped with East Kent Goldings, the finish is dry, herbal, and delicately bitter.
