Raw farmhouse sour Saison with lingonberry. Mashed on pilsner, rye, and oats, dry hopped with whole cone Illinois Cascade & Centennial. Brewed with a rare strain of Lithuanian saison yeast that contains lactobacillus. This yeast has very little phenolic quality outside of a slight earthiness, but what it lacks in phenolics it makes up for in ester. Huge notes of pineapple skin, guava & orange juice. Using a small amount on lingonberry we paired these tannic little berries to match the rye spiciness in the malt build. A very unconventional holiday saison.
