A rustic, fruity, spicy, traditional French Farmhouse Saison brewed using traditional “farmhouse” production methods. Created with Newport hops, pale malt and wheat malt.

This Saison has a light fog amidst pale straw (SRM 2) while fine carbonation rises within. A big, fine, white head lasts for a long while before turning to seafoam and holding for the duration. The head leaves a coating of delicate lace on a pint glass.
The aroma is spicy and funky yeast that fills the nose. This is that prototypical Farmhouse/Saison aroma. Secondary aromas are that of fallen orchard fruit and white pepper. Some bananas and cloves are detectible, similar to a Hefeweizen, while some coriander is similar to a Witte.
The flavors closely follow the aromas, with pepper and coriander up front, and banana and clove at the end of each sip. Nice mild bitterness fades to mild sweetness and a hint of sourness. A mild finish every so gradually fades with a light citrus flavor. The fruits become more pronounced with slight warmth.
A light-to-medium body and the texture of chiffon. Surprisingly, there is a hint of alcohol, while light, fine carbonation is unexpected. There is a hard metallic feel as it warms. This beer is dry without scorching the palate.
Birdhouse has produced a superb beer for one to relax with on a hot summer afternoon. I'm thinking it would be a nice beverage for a picnic or while watching horse trials. I enjoyed it sitting on a shady deck and simply listening to birds and the gentle rustling of leaves in the trees around me. This is a really nice beer and reminds me of Grisette.
