I am surprised that a 7 month old will attempt the tripel, one of the more sophisticated ales because its strength-- usually boosted by brewers sugar -- is difficult to conceal and its fruitiness resists balance from hops. Unfortunately, but not surprisingly, Peregrination doesn't succeed as a tripel.

While a hard pour gets some foam, it is not sustained by bubbles or protein swirls. This indicates an inadequate yeast that has consequences for the rest of Peregrination's performance. Smells are sweet, but also flat. Tastes remain below average with sweet as the only characteristic. The mouth is viscous and full, but where are my bubbles?

Peregrination is so sweet, I hesitated to have it with dinner. But saved some. My fears are correct: this recipe will not make food taste better... to understate the case.

OK, now for a the quickie review of a 7 month old brewer. LaBelle has a great website if it were even a two year old; and possibly better than most entering elementary school. Beyond that, not much else about Labelle is unique or new under the sun among the 8000+ American crafters. But for your dedication in starting in the middle of pandemic.... we all have to wish you well. Cheers !
