It has been three years since I've had a Seipp's, The Beer That Built Chicago. (I like the moxie of that claim from a micro whose ancestral brewery closed ninety years ago.) But today's Seipp's does play upon that history, for which I give them high Overall Hugs.

I also like their beer. My only other Seipp's beer was three years ago was their Bock, which had good authenticity. This Hefe is less so, possibly because the yeast is trickier to master. This Hefe Looks less cloudy and foamy than the standard. But the Smells are closer to the fruity banana the masters brew. Tastes are balanced, not sweet. Wheat soft, but cleansing in my mouth.

Three years later, I see Seipp's left Metropolitan (one of Chicagoland's better lager brewers) and is now housed at the Pilot Project (although I don't see Seipp's on PP's website, so maybe relations just started.) Anyhow, I wish them well and now have another good reason to visit PP.

16 oz can into a weizen glass. Cloudy marigold color with a one-finger foamy off-white head. Clove, banana bread, faint vanilla aroma. Peach, bubblegum, and melon flavor. Medium body. Flavorful and easy-drinking hefe.

Cloudy yellow body, white head. Wheat led nose with orange, clove and some skunkiness. Taste has a lemon and bubblegum flair to the orange and wheat stars. Thin but wheaty body, finish is a little muddled, but otherwise clean. Solid easy drinking hefe for summer

"Best by 11/17/22"; drank 7/11/22 @ the Yarchives.

Cloudy dull orange/yellow appearance.

A violent pour yielded a big, bright white head; decent lace.

Clove, orange peel & banana notes in the nose.

Soft, medium mouthfeel.

Clove, orange peel, fresh flowers & mild banana flavors.

A refreshing, substantial Hefe.
