Every year when the grapes at Vox Vineti are being processed our brewer is on site at the vineyard to help and once the wines have been fully extracted from the pomace it is then brought back to our brewery, shoveled into a stainless steel tank and made ready for a young saison to be blended in. After a few moons of melding together the now pink stained beer is racked off the fruit, bottled and kegged, and laid rest for even more moons. Over that time carbonation is created and a patient maturity and dynamicism slowly reveals itself. This years release from the '22 harvest features Cabernet Sauvignon and Barbera grapes and is incredibly full in body and has an immensely expressive flavor progression yet finished bone dry. Perfect for sitting outside in the warm sun as you watch the world slowly, day by day, as it transforms itself into a green giant.
