Beer one of two being debuted at our Second Lagerversary is a collaboration between us and our friends at Bierstadt Lagerhaus. Ashleigh, co-owner and brewer of Bierstadt Lagerhaus, flew in from Denver, CO to brew an Italian Pils with us.
No, this isn’t our version of the green bottle beer with an Italian name. This is a style that came out of an Italian craft brewery who began dry hopping their Pilsner recipe and which has had an enormous impact on some of the better know American craft Pilsners in the market today.
Our take on this style incorporates many of the traditional techniques that both us and Bierstadt employ in our brewing process including very cold fermentation, horizontal lagering, and natural carbonation. While typically dry hopped with German varietals, we selected a blend of two hops (Tettnanger and Polish Tomyski) that hold a significance of German brewing on our respective breweries, and Goldfinger’s Polish brewing roots that we transplanted and nurtured at our Downers Grove brewery.

16 ounce can into a pilsner glass. Canned 7/6?/24, had 8/5/24.
Pours a clear pale golden color, with a two inch head of spongy foam and light foamy lacing. Active carbonation. Aromas of herbal hops, wheat, malt. Has a sweet aroma. Flavors of herbal hops, wheat, malt, some herbal hop bitterness- especially on the finish. Tastes a little spicy. Smooth, crisp, a very good light body, well carbonated.
A solid effort. There’s a nice balance between the hops and base, and it has enough hop bitterness to give it an edge. Very enjoyable.

Had on tap. Cloudy yellow body, a full finger of eggshell white foam with sporadic lacing. Floral hops and lesser so grassy hops meet the pilsner malt and a lasting connection is made, with country loaf accented yeast, and general rustic notes, maybe hay. Taste is more defined with the star-crossed hops and malts raising up biscuit, country loaf, white pepper and playful citrus peel. Feel is light and crisp, stays dry but never thin. Well done

16 oz can into a pint glass. Clear golden color with a short-lived head. Grassy hops and a bit of funk in the nose. Taste is more complex - the grassiness is there and more bitter than you might expect, but nicely complemented with some floral notes and bread-like qualities. Feel is effervescent, super crisp and very refreshing.

Pours a lovely crystal clear golden color. Thick frothy white head forms on the beer, lingers for a moment, then dissipates ultimately leaving just a thin ring of foam on the beer. The beers is mildly effervescent which does feed that thin layer of foam on the top of the beer. Aroma has notes of straw, wet hay, some white bread with lightly fruity and floral hop notes. A touch of spicy peppery hops.
Taste follows the nose with of white bread, straw, wet hay, dried grass with some spicy, dried grassy hop notes. There is a mild fruity and floral quality to the beer, but it is very subtle and complimentary. The hops are there and really shine on that malt backbone, but it does not come across as a "hoppy" beer. Feel is light, crisp, and bright. Lively carbonation with a pretty dry finish.
This is just a lovely Italian pilsner. So bright and crisp - a joy to drink. I've been working on the growler all afternoon and it is just about gone - and I don't know where it went. Thats how easy drinking it is.
