The second beer we are releasing on our Third Lagerversary is “Smoke Two Lagers.” We got together with the creative minds @fairstatecoop to devise a plan for more smoked lagers in our respective portfolios. One such style of smoked beer is unlike the rest: Smoked Helles.
While other smoky beers may have a strong smoked character, smoked helles is about subtlety. It is about harnessing the complexity of malt and hops to find a balanced smoke character that complements the other flavors.
To achieve this, we harvested the yeast from our Grodziskie, which contained a gentle smokiness, and used it to ferment our helles. To provide a multi dimensional smoke quality, we also tossed in a little bit of beechwood smoked malt which, coupled with the subtle oak smoke from the Grodziskie yeast, provides for a beautifully complex yet gentle smokiness. Single decocted, malty, soft, subtly smoky, naturally carbonated, and horizontally lagered for an extended period of time.

I had this on draft 9/19/23 @ the Hopleaf.
See-through orange/yellow appearance.
Small bright white head; minimal lacing remained.
Faint smoke & raw wheat notes in the nose; fairly mild.
Medium thin mouthfeel.
Mild smoke & faint raw wheat flavors up front; mild honey notes on the finish.
Not too smoky, but pretty neutral overall. Good, not great.

Had Smoke Two Lagers in the Goldfinger taproom beer garden, Downers Grove, Ill., for the Third Lagerversary, on draft into clear plastic beer cup, and also poured from pint can, bottom stamped "CANNED ON 7/31/23" and "THIRD LAGERVERSARY," into pilsner glass.
Pours straw-gold with clarity and 1 and 1/2-finger near-white head, with decent retention, but leaving practically no lace. Initially a little mild wood smoke and then (more) mild sweet malt aromas off pour, with smoke aroma growing into balance with the sweet malt, and both continuing to the finish. On drinking, begins big sweet malt, with a nice smooth body, then mild woodsmoke flavor joins, and together they carry into a balanced, sweetly malty, somewhat smoky, yet crisp helles finish.
I bet this beer would be great with BBQ. Incidentally, this smoked helles is better-balanced than Goldfinger's Original, on which it's based, although it's unclear whether because of the added Beechwood smoked malt or a reduced hop bill.
