This 100% Ontario-made, farm-to-glass beer is brewed using malt from Mississippi Mills Malting Co in Pakenham, hops from Tavistock Hops in Perth, and our own house lager yeast. It's an homage to our first home in Toronto's Liberty Village, where we opened the doors to our first brewery and taproom in May 2022.
This beer has been granted the BrewON Gold level certification, celebrating beer that uses 100% hops from Ontario Hop Growers' Association member growers. 37 IBU.

Poured a 568ml can into a pint glass. A two finger fine white head on a very slightly hazy gold. The head diminishes to a layer that sticks around to the end. Sheets of lacing.
Slight corn in the nose. Spicy hops. Tastes of grain and bread. Clean and crisp.
The mouthfeel is light, clean and crisp. Good carbonation that sticks around. Overall an excellent summer quencher. A solid Czech Pilsner. True to the style. Sessionable.

At my lady Pamela's house; canned and chilled, 568mL in a pint glass. From The Roundhouse Centre LCBO on Howard Ave. in nearby Windsor. My first beer from the Toronto, Ontario brewery.

I bought 2 cans at the LCBO in Ontario Canada at 568ml 4.5%alc
Something in the water Liberty's farm to glass Pilsner Hmm interesting can.
Poured into glass with a 2 finger head leaving a lace as you drink it very enjoyable nice taste and smell this beer is almost perfect light and very enjoyable to have for a party .

568 mL can from the LCBO; dated Aug 7 2024 and served slightly chilled.
Pours foggy and translucent, its medium gold-coloured body capped off with an inch of tight, foamy white head. About five minutes later, it has been reduced to a creamy collar and sudsy cap, with a narrow ring of lace clinging to the glass - lookin' good so far. Light diacetyl on the nose, with bready, doughy malts and herbal, spicy hop notes also discernible.
Pretty well done for a domestic Czech pils. Wholesome malt flavours of grain and bread, with hints of doughy, biscuity sweetness mid-sip; these flavours continue late into the sip, where they are joined by some herbal, earthy hop bitterness. Fairly dry conclusion. Light in body, with lively carbonation that remains spritzy right down to the last couple of swigs. Excellent drinkability - grab a few of these cans after work on a Friday night and you're set.
Final Grade: 3.8, a worthy B+. Liberty's Farm to Glass Pilsner is one of the better Something in the Water brews I've tried so far, and it's certainly the best of their lagers. I also appreciate the format, and wish more Ontario brewers would start canning their session beers in stovepipes. The imports (e.g. Budvar & PU) are probably better bang for your buck, but Liberty's is still a very solid pils and a great alternative, assuming you're willing to spend a bit more to support a local company. I've had several of these cans over the last year or so, and I doubt this one will be the last.
