We start with a base of TexMalt Heritage 2-row and Denton Co. wheat, plus a combo of Hallertau Blanc and Lotus hops. Then we settled on the unique combo of carrots and Texas-grown oranges to add both color and fermentable sugar to the beer. After primary fermentation in stainless w/ Community Cultures' Ocotillo native yeast, we transferred the beer to our American white oak foeder for conditioning and added Brettanomyces bruxellensis var. Drei, plus the juice from 100lbs of carrots and oranges. You’ll find notes of sweet potato pie, orange marmalade, and caramelized pineapple upside down cake in this unfiltered, dry, and full-bodied Texas saison.

Absolutely beautiful beer - poured from a bottle into a tulip glass. Bright hazy orange color with huge white fluffy head and excellent curtain lacing. Nice smell and taste of sweet orange. Some carrot and brett earthiness. Very good with this evening’s stir fry.
